Colourful chicken & chorizo pasta
*Everything in this dinner is free minus the chorizo - you could use bacon without the fat to subsitute?* for us this recipe makes two big dinners and three lunches.
Ingredients:
1x red pepper
1x green pepper
1x yellow pepper
3x spring onions
1x red onion
1x can of sweetcorn
1x canned tomatoes
3x generous handfuls of spinach
3x chicken breasts
1x chorizo ring
4x cups of wholemeal pasta
1x lump of mozarella (measure this for your hexa)
Herbs:
- 1 tbsp of garlic granules/salt
- salt & pepper
- 1 tbsp of paprika
Method:
1. Chop all of your veggies up, I tend to put all of these in a jug ready to pour onto the meat
2. Get your pasta on the boil
3. Fry off your chorizo and then put to one side
4. Fry off your chicken and sprinkle over the garlic salt
5. Add to the chicken your onions, peppers & sweetcorn until veggies have softened
6. Add to the above your can of chopped toms
7. Add the chorizo back in
8. Drain your pasta with cold water and leave to drain for 5 minutes
9. Add in your spinach and give it a good stir it'll really goes tiny, hence adding so much (don't worry it won't over fill your frying pan!)
10. Add your pasta give it a really good stir and then crumble over the mozarella
